Luoyang — The City Where Gods Were Carved Into Stone

Luoyang is one of China's great ancient capitals — a city that served as the imperial seat for 13 dynasties over 1,500 years. It is best known today for the Longmen Grottoes, a UNESCO World Heritage site where over 100,000 Buddhist statues were carved into the limestone cliffs along the Yi River between 493 and 1127 AD. The scale is staggering: the largest statue, Vairocana Buddha, stands 17 metres tall and was completed in 676 AD under the reign of Empress Wu Zetian.
Beyond the grottoes, Luoyang is the home of the Shaolin Temple — the birthplace of Chan (Zen) Buddhism and kung fu — and the White Horse Temple, the first Buddhist temple established in China (68 AD). In spring, the entire city erupts in peony flowers, earning Luoyang its title as the "Peony Capital of China."

1. Longmen Grottoes (龙门石窟)
The crown jewel of Luoyang. Over 2,300 caves and niches carved into a kilometre-long limestone cliff face along the Yi River. The sheer density of statuary — over 100,000 individual figures — makes it one of the most concentrated Buddhist art sites in the world. The centrepiece is the Fengxian Temple cave, featuring the 17-metre Vairocana Buddha, whose serene face is said to have been modelled on Empress Wu Zetian herself.

2. Shaolin Temple (少林寺)
The most famous Buddhist temple in China — the birthplace of Chan (Zen) Buddhism and the cradle of Chinese martial arts. Founded in 495 AD, the temple complex includes the original meditation hall, the Pagoda Forest (over 200 brick pagodas housing the ashes of past abbots), and the Kung Fu Training Centre where young monks practise from age 6. 3. White Horse Temple (白马寺)

Luoyang Water Banquet (洛阳水席) — The city's signature dining experience. A full-course banquet of 24 dishes served in sequence, mostly soup-based — hence "water banquet." The dishes alternate between cold appetisers and hot soups, building from mild to intensely flavoured. The most famous dish is Peony Swallow Dish (牡丹燕菜) — a delicate soup with shredded white radish that has been transformed to resemble swallow's nest. Luoyang Beef Soup (洛阳牛肉汤) — The city's breakfast of champions. Beef bones are simmered overnight with star anise, cinnamon, and Sichuan peppercorn.
